I love all the towns dotted along the Hudson River, and Beacon is no exception to this. On a trip up to my sister-in-law’s wedding, I made sure to stop here for lunch and a donut dessert. Peaceful Provisions makes all their donuts from scratch. The flavors change weekly and they are all vegan. There were quite a few options when we were there. I chose the apple cider donut with cinnamon sugar, Dina the double chocolate cake donut, and Siena the vanilla brioche twist with sprinkles. They didn’t have any when we were there, but their fritters also look amazing.
